So the new year is about to arrive, and like many people at this point, I’ve decided to rid myself of some of life’s excesses. Unfortunately for me, that basically means fat.
I’ve chosen to go Keto. If you haven’t heard of the Keto diet, it’s a low carb, high fat plan. Basically, I think of it as the old Adkins diet on steroids. Carbs are limited to 20 grams a day. To put that number in perspective, remember that a slice of bread is 15 carbs, an apple 20, and a banana 30. Needless to say, I won’t be eating those foods anytime soon.
But that’s okay because this diet lets me eat a ton of good things. I can have cream cheese, steak, chicken with the skin on, and even whipped cream. The heart of this program is based on eating a lot of fat. I spent tonight cooking a batch of homemade, low-carb ketchup. I really love ketchup on hamburgers etc., but when it come out of the bottle from the grocery store it has too many – you guessed it – carbs.

My diet will go on for a while. I’ve been a very bad girl in the kitchen. It’s going to take me a long time to slim down. I’ll be back with more recipes from time to time, too.
